Asian-Style Red Lentil Curry

Ingredients
- 200 g Red lentils
- 3 piece Carrots
- 300 g Potatoes
- 100 g Fresh spinach
- 400 ml Coconut milk
- 2 tbsp Curry powder
- 2 tbsp Olive oil
- 300 ml Water
- 1 tsp Salt
Instructions
Step 1
Cut the carrots and potatoes into small cubes.
Step 2
Toast the curry powder in the oil for 1 minute in a saucepan.
Step 3
Add the carrots, potatoes, and red lentils, and stir well.
Step 4
Pour in the water and coconut milk, and bring to a boil.
Step 5
Reduce heat and simmer for 12 minutes until the vegetables are cooked through.
Step 6
Add the fresh spinach and cook for 2 more minutes.
Step 7
Season with salt and serve hot.
