Lentil Curry with Coconut Milk and Sweet Potatoes
A simple and flavorful Indian curry with lentils, coconut milk, and sweet potatoes. Complete, comforting, and slightly spiced, ready in 35 minutes.

Ingredients
- 150 g Green lentils
- 300 g Sweet potatoes
- 100 g Carrots
- 250 ml Coconut milk
- 2 tsp Curry
- 1.5 tbsp Olive oil
- 300 ml Water
- 1 tbsp Fresh ginger
- 2 clove Garlic
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Peel and cut sweet potatoes and carrots into cubes. Mince the garlic and ginger.
Step 2
Heat the oil in a skillet and sauté the garlic and ginger for 2 minutes.
Step 3
Add the curry, stir for 1 minute, then add the vegetables and lentils. Pour in the water.
Step 4
Simmer for 15 minutes until the vegetables are tender. Pour in the coconut milk and simmer for an additional 5 minutes.
Step 5
Season with salt and pepper, and serve hot, optionally with plain rice.
