Indian-Style Lentil and Potato Curry
A rich and flavorful curry with tender lentils and creamy potatoes, spiced and aromatic. Enjoy with rice or bread.

Ingredients
- 200 g Red lentils
- 400 g Potatoes
- 2 piece Carrots
- 1 piece Onion
- 400 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the onion, carrots and potatoes into cubes
Step 2
Pour the olive oil into a Dutch oven or deep saucepan and sauté the onion for 2 minutes
Step 3
Sprinkle the curry powder, mix well for 1 minute to infuse the flavors
Step 4
Add the potatoes, carrots and lentils, pour in the water and coconut milk
Step 5
Bring to a boil then simmer covered for 25 minutes until tender
Step 6
Season with salt and pepper and serve hot
