Lentil and Potato Curry
A simple and flavorful curry of lentils and potatoes with warm spices and coconut milk. Serve with rice or bread.

Ingredients
- 200 g Cooked lentils
- 300 g Potatoes
- 400 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 2 clove Garlic
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the potatoes into small cubes. Mince the onion and garlic.
Step 2
Heat the oil in a pot and sauté the onion and garlic for a few minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the potatoes and cook covered for 15 minutes.
Step 5
Pour in the coconut milk and add the lentils. Simmer for 10 minutes.
Step 6
Season with salt and pepper before serving.
