Indian-Style Red Lentil and Apple Curry

Ingredients
- 200 g red lentils
- 2 piece apples
- 2 piece carrots
- 1 piece onion
- 400 ml coconut milk
- 300 ml water
- 1.5 tsp curry powder
- 1 tbsp oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Peel and dice the apples, carrots, and onion into small pieces.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder and stir well for 1 minute.
Step 4
Pour in the lentils, carrots, apples, water, and coconut milk. Bring to a boil.
Step 5
Reduce heat and simmer for 15 minutes until the lentils are completely cooked.
Step 6
Season with salt and pepper. Serve with white rice if desired.
