Curry with Lentils and Apples
A mild Indian curry with sweet and savory notes, combining the gentle sweetness of apples with warming spices. Serve over rice or with bread.

Ingredients
- 200 g Red lentils
- 2 piece Apples
- 2 piece Carrots
- 1 piece Onions
- 400 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 200 ml Water
- 1 pinch Salt
Instructions
Step 1
Peel and dice the onion, cut the carrots into small cubes, and chop the apples into chunks.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder and stir well for 1 minute.
Step 4
Add the lentils, carrots, water, and coconut milk. Bring to a boil.
Step 5
Reduce heat and simmer for 18 minutes.
Step 6
Add the apples and cook for 4 more minutes. Season with salt.
