Lentil and Zucchini Curry
A simple yet flavorful Indian curry with spices, lentils, and zucchini. Served with white or brown rice for a complete meal.

Ingredients
- 200 g Red lentils
- 2 pieces Zucchini
- 1 piece Onion
- 400 g Crushed tomatoes
- 400 ml Coconut milk
- 300 g White rice
- 2 tsp Curry powder
- 2 tbsp Olive oil
- à goût Salt
- à goût Pepper
Instructions
Step 1
Begin cooking the rice according to the package instructions.
Step 2
Heat the oil in a wok or pot and add the finely chopped onion.
Step 3
Add the curry powder and cook for 1 minute.
Step 4
Add the lentils, crushed tomatoes, and coconut milk.
Step 5
Add the diced zucchini and simmer for 20 minutes.
Step 6
Season with salt and pepper. Serve over hot rice.
