Lentil and Zucchini Curry with Coconut Milk
A savory and creamy Indian curry with lentils, zucchini, and coconut milk. A richer dish to break from the everyday routine.

Ingredients
- 200 g Cooked lentils
- 1.5 piece Zucchini
- 200 ml Coconut milk
- 2 tbsp Olive oil
- 1.5 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the zucchini into cubes. Sauté in a pan with olive oil for 5 minutes.
Step 2
Add the curry powder. Mix well and cook for 1 minute to release the flavors.
Step 3
Pour in the coconut milk and add the cooked lentils. Mix well.
Step 4
Simmer for 15-20 minutes over medium heat. Season with salt and pepper.
Step 5
Serve hot, optionally with white rice on the side.
