Lentil and Zucchini Curry
A simple and flavorful Asian curry with lentils, zucchini, and coconut milk. Served over a bed of white rice for a complete and aromatic meal.

Ingredients
- 200 g Lentils
- 200 g Zucchini
- 200 ml Coconut milk
- 300 ml Water
- 2 tsp Curry powder
- 2 tbsp Olive oil
- à goût Salt
- à goût Pepper
- 150 g White rice
Instructions
Step 1
Cook the white rice in a pot of salted water according to package instructions (usually 15-18 minutes).
Step 2
Meanwhile, peel and dice the zucchini. Rinse the lentils.
Step 3
Heat the oil in a pan and add the curry powder. Let it cook for 1 minute to release the aromas.
Step 4
Add the lentils, zucchini, water, and coconut milk. Bring to a boil, then reduce heat and simmer for 15-18 minutes.
Step 5
Season with salt and pepper to taste. Serve the curry over hot white rice.
