Red Lentil and Spinach Curry
A savory and hearty Indian curry with quick-cooking red lentils and tender spinach, served with rice.

Ingredients
- 150 g Red lentils
- 200 g Fresh spinach
- 1 piece Onion
- 2 clove Garlic
- 1.5 tsp Curry powder
- 200 ml Coconut milk
- 400 ml Water
- 2 tbsp Olive oil
- 1 pinch Salt
Instructions
Step 1
Mince the onion and garlic.
Step 2
Sauté the onion and garlic in oil in a large pot.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the lentils, water, and coconut milk.
Step 5
Simmer for 20 minutes until the lentils are cooked.
Step 6
Add the spinach and cook for 3 minutes.
