Red Curry Lentils and Carrots
A flavorful and spiced Asian curry with lentils, carrots, and spinach. Easy to prepare and absolutely delicious with coconut milk and aromatic spices.

Ingredients
- 200 g Red lentils
- 3 piece Carrots
- 100 g Fresh spinach
- 400 ml Water
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1.5 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Peel the carrots and cut them into matchsticks.
Step 2
Heat the oil in a pot, add the curry paste, and cook for 1 minute, stirring constantly.
Step 3
Add the carrots and sauté for 2 minutes.
Step 4
Pour in the water and coconut milk, add the red lentils, and stir to combine.
Step 5
Bring to a boil, then reduce heat and simmer for 18 minutes.
Step 6
Add the spinach, cook for 2 minutes, then season with salt and pepper to taste.
Step 7
Serve with white rice or pasta.
