Lentil Curry with Rice
A mild and flavorful lentil curry inspired by Indian cuisine. Easy to make and comforting, served with plain white rice.

Ingredients
- 200 g Red lentils
- 150 g White rice
- 1 piece Onion
- 1.5 tsp Curry powder
- 200 ml Light coconut milk
- 1 tbsp Olive oil
- à goût Salt
- 700 ml Water
Instructions
Step 1
Cook the rice in salted boiling water for 18 minutes.
Step 2
Chop the onion and sauté it in oil in a pan.
Step 3
Add the curry powder and cook for 1 minute.
Step 4
Add the lentils, coconut milk, and 400 ml of water.
Step 5
Simmer for 15-20 minutes until reduced. Season with salt.
Step 6
Serve the curry over white rice.
