Lentil Curry with Spinach and Apples
An original Asian-French fusion: a mild and flavorful curry enriched with lentils, spinach, and apples for a sweet-savory twist.

Ingredients
- 200 g Lentils
- 150 g Fresh spinach
- 2 piece Apples
- 2 piece Carrots
- 1 piece Onion
- 400 ml Coconut milk
- 300 ml Water
- 2 tbsp Red curry paste
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the carrots and onion into small pieces, and cut the apples into cubes.
Step 2
Heat the oil in a saucepan and sauté the onion for 2 minutes.
Step 3
Add the curry paste and stir well for 1 minute.
Step 4
Add the carrots, lentils, water, and coconut milk, then bring to a boil.
Step 5
Simmer for 15 minutes until the lentils are tender.
Step 6
Add the apples and spinach, cook for 5 more minutes.
Step 7
Season with salt and pepper. Serve hot with rice if desired.
