Curry Lentils with Apples and Spinach
A mild and fruity Indian curry combining lentils, apples, and spinach. Served alone or with rice, it's an exotic, flavorful, and satisfying dish.

Ingredients
- 200 g Lentils
- 2 piece Apples
- 150 g Spinach
- 1 piece Carrots
- 3 tbsp Olive oil
- 500 ml Water
- 2 tsp Curry powder
- 200 ml Coconut milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the apples and carrots into small pieces.
Step 2
Heat the oil in a saucepan and sprinkle the curry. Toast for 1 minute.
Step 3
Add the lentils, apple and carrot dice. Pour in the water and coconut milk.
Step 4
Bring to a boil, then reduce heat and simmer for 15 minutes.
Step 5
Add the spinach and stir until wilted (2 minutes). Season and serve.
