Lentil and Apple Curry (Asian-French Fusion)
An original fusion curry with lentils, carrots, and a hint of sweetness from apples. Satisfying and deeply flavorful.

Ingredients
- 200 g Red lentils
- 2 piece Apples
- 2 piece Carrots
- 100 g Spinach
- 300 ml Coconut milk
- 200 ml Water
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the carrots into rounds and cut the apples into cubes.
Step 2
Heat the oil in a pot and sauté the carrots for 3 minutes.
Step 3
Add the curry powder and stir well.
Step 4
Add the lentils, water, coconut milk, and apples.
Step 5
Simmer for 15 minutes until tender.
Step 6
Add the spinach, season with salt and pepper, and cook for 3 more minutes.
