Red Lentil and Apple Curry
A mild and fruity Indian curry blending red lentils, apples and spinach. Exotic yet easy to prepare.

Ingredients
- 200 g Red lentils
- 2 piece Apples
- 150 g Fresh spinach
- 1 piece Carrots
- 1 piece Onion
- 400 ml Coconut milk
- 300 ml Vegetable broth
- 2 tsp Curry powder
- 2 tbsp Peanut oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Peel and dice the onion, cut the carrots into batons and the apples into cubes.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder, stir well and cook for 1 minute.
Step 4
Add the carrots, lentils, broth and coconut milk. Bring to a boil.
Step 5
Reduce heat and simmer for 15 minutes.
Step 6
Add the apples and spinach, season with salt and pepper. Cook for 3 more minutes.
