Lentil and Spinach Curry
A simple and flavorful curry with an Indian twist. Tender lentils in a spiced sauce with spinach and carrots, served over white rice.

Ingredients
- 250 g green lentils
- 200 g fresh spinach
- 2 piece carrots
- 1 piece onion
- 600 ml water
- 200 ml coconut milk
- 2 tbsp olive oil
- 2 tsp curry powder
- 1 pinch salt
- 1 pinch pepper
- 250 g white rice
Instructions
Step 1
Cook the rice according to package directions.
Step 2
Peel and dice the onion and carrots into small pieces.
Step 3
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 4
Add the curry powder and stir, cook for 1 minute.
Step 5
Add the lentils, carrots, water, and coconut milk, bring to a boil.
Step 6
Simmer for 15 minutes over medium heat, then add the spinach and cook for 2 minutes.
Step 7
Season with salt and pepper, serve over hot rice.
