Red Lentil Curry with Spinach and Tomato
A simple and flavorful Indian curry with lentils, spinach, and tomato. Comforting and authentic, served on its own or with rice.

Ingredients
- 250 g Red lentils
- 200 g Fresh spinach
- 400 g Canned tomatoes
- 1 piece Onion
- 3 tbsp Olive oil
- 2 tsp Curry powder
- 500 ml Water
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and mince the onion finely.
Step 2
Sauté the onion in hot oil until translucent.
Step 3
Add the curry powder and cook for 1 minute.
Step 4
Add the rinsed lentils, tomatoes, and water.
Step 5
Bring to a boil and simmer for 18-20 minutes.
Step 6
Stir in the fresh spinach, season with salt and pepper.
Step 7
Cook for another 1-2 minutes and serve hot.
