Asian Lentil Curry
A mild and flavorful curry inspired by Asian cuisines. Rich in taste with coconut milk and spices, served over rice.

Ingredients
- 250 g Red lentils
- 1 piece Onion
- 2 clove Garlic
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 200 g White rice
- 600 ml Water
- 2 tbsp Olive oil
- 1 pinch Salt
Instructions
Step 1
Start cooking the rice in a pot with 400ml water
Step 2
Chop the onion and mince the garlic
Step 3
Heat the oil in a pan and sauté onion and garlic for 3 minutes
Step 4
Add the curry paste and cook for 1 minute, stirring
Step 5
Pour in the coconut milk and 200ml water, then add the rinsed lentils
Step 6
Simmer for 15-18 minutes until the lentils are tender
Step 7
Season with salt and serve the curry over rice
