Asian Lentil Curry

Ingredients
- 250 g Lentils
- 400 ml Coconut milk
- 1 piece Onion
- 2 cloves Garlic
- 2 tsp Curry powder
- 2 tbsp Oil
- à goût pinch Salt
- 300 ml Water
- 250 g White rice
Instructions
Step 1
Cook the rice in a pot of boiling salted water for 20 minutes.
Step 2
Slice the onion and mince the garlic.
Step 3
Sauté the onion and garlic in oil in a pan for 2 minutes.
Step 4
Add the curry powder and stir for 30 seconds.
Step 5
Add the lentils, coconut milk, and water, bring to a boil and simmer for 15 minutes.
Step 6
Season with salt and serve the curry over hot rice.
