Asian Lentil Curry
A comforting curry with lentils, spinach, and potatoes in a savory sauce. Simple and authentic Asian flavors.

Ingredients
- 250 g Lentils
- 300 g Potatoes
- 200 g Spinach
- 2 piece Carrots
- 500 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 200 ml Coconut milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the potatoes and carrots into small dice.
Step 2
Heat the oil in a skillet and sauté the diced potatoes and carrots for 3 minutes.
Step 3
Add the curry powder and cook for 1 minute to release the aromas.
Step 4
Add the rinsed lentils and water, bring to a boil.
Step 5
Simmer for 15 minutes until the vegetables are tender.
Step 6
Pour in the coconut milk, add the spinach, and cook for 3 minutes.
Step 7
Season with salt and pepper. Serve hot.
