Creamy Coconut Lentil Curry
A savory and creamy Indian curry with lentils and zucchini, served over rice. Exotic and comforting.

Ingredients
- 200 g Red lentils
- 250 g Zucchini
- 200 ml Coconut milk
- 300 ml Water
- 2 tsp Curry powder
- 2 clove Garlic
- 2 tbsp Olive oil
- 1 pinch Salt
- 150 g White rice
Instructions
Step 1
Begin cooking the rice according to package instructions.
Step 2
In a pot or Dutch oven, sauté the garlic in olive oil.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the lentils, diced zucchini, water, and coconut milk.
Step 5
Simmer for 20 minutes until the lentils are tender. Season to taste.
Step 6
Serve the curry over hot rice.
