Indian-Style Lentil Curry

Ingredients
- 200 g Lentils
- 200 ml Coconut milk
- 400 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the lentils.
Step 2
Heat the oil in a pot and add the curry powder. Let it infuse for 1 minute.
Step 3
Add the lentils and pour in the water. Bring to a boil.
Step 4
Reduce heat and simmer for 20 minutes.
Step 5
Pour in the coconut milk and simmer for 3 more minutes. Season with salt and pepper. Serve with rice or bread.
