Lentil Curry with Crispy Oat Topping
A rich and flavorful lentil curry topped with a crispy oat garnish. A fusion between Asian cuisine and simple everyday ingredients.

Ingredients
- 250 g Lentils
- 300 g Cauliflower
- 150 g Beet
- 80 g Rolled oats
- 600 ml Water
- 3 tbsp Olive oil
- 1 tbsp Mustard
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Toast the oats for 3 minutes in a pan with 1 tablespoon of oil, set aside.
Step 2
Chop the cauliflower and beet.
Step 3
Sauté the vegetables for 5 minutes in a pot with the remaining oil.
Step 4
Add the lentils, mustard and water, bring to a boil.
Step 5
Simmer for 20 minutes until fully cooked.
Step 6
Season to taste and serve topped with crispy oats.
