Easy Vegetable Curry with Coconut Milk
A real Indian curry that's easy and flavorful, made with whatever vegetables you have on hand and coconut milk. Serve with white rice for a complete meal that everyone loves.
Ingredients
- 300 g potatoes
- 2 medium carrots
- 200 g mushrooms
- 400 ml coconut milk
- 1 medium onion
- 2 clove garlic
- 2 tsp curry powder
- 0.5 tsp turmeric
- 2 tbsp oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Peel and cube the potatoes and carrots. Mince the garlic and onion. Slice the mushrooms.
Step 2
Heat the oil in a large pot or skillet, add garlic and onion, and sauté for 2 minutes.
Step 3
Add the curry powder and turmeric, mix well, and let the spices bloom for 1 minute.
Step 4
Add the potatoes, carrots, and mushrooms, stirring to coat with the spices.
Step 5
Pour in the coconut milk, bring to a boil, then simmer for 15 minutes until the vegetables are tender.
Step 6
Season to taste with salt and pepper. Serve with white rice or pasta.
