Simple Vegetable Curry

Ingredients
- 350 g Potatoes
- 250 g Broccoli
- 200 g Carrots
- 400 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 pinch Salt
- 200 ml Water
Instructions
Step 1
Cut the potatoes into cubes and the carrots into sticks.
Step 2
Cut the broccoli into small florets.
Step 3
Heat the oil in a pan and add the curry powder.
Step 4
Add the potatoes and carrots, cook for 8 minutes.
Step 5
Add the coconut milk and water, stir to combine.
Step 6
Add the broccoli and simmer for 15 minutes.
Step 7
Season with salt and serve hot.
