Quick Vegetable Curry
A simple Asian-style curry with broccoli and cauliflower, aromatic and flavorful. Serve with rice or noodles. Ready in 30 minutes with just a few ingredients.

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 150 g Carrots
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 2 tbsp Olive oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the broccoli and cauliflower into florets. Cut the carrots into sticks.
Step 2
Heat the olive oil in a pot. Add the curry paste and sauté for 1-2 minutes.
Step 3
Pour in the coconut milk and water. Bring to a simmer.
Step 4
Add the vegetables and cook for 12-15 minutes until tender.
Step 5
Season with salt and pepper. Serve hot.
