Indulgent Vegetable Curry with Chocolate
An original and flavorful Asian curry with carrots, cauliflower, broccoli, and a secret hint of chocolate that enriches the sauce. Served over quinoa or pasta.
Ingredients
- 300 g Carrots
- 250 g Broccoli
- 200 g Cauliflower
- 30 g Dark chocolate
- 200 g Quinoa
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 2 tbsp Olive oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the quinoa in boiling water according to package instructions, about 15 minutes.
Step 2
Cut the vegetables into uniform pieces (carrots, broccoli, cauliflower).
Step 3
Heat the oil in the skillet and cook the curry paste for 2 minutes to release the flavors.
Step 4
Add the vegetables and sauté for 3 minutes, then pour in the coconut milk.
Step 5
Simmer for 12 minutes until the vegetables are tender.
Step 6
Add the grated chocolate at the end of cooking and stir well to create a rich and smooth sauce.
Step 7
Season to taste and serve the curry over the hot quinoa.
