Gourmet Vegetable Curry
A simple and flavorful Indian curry with coconut milk, fresh vegetables, and spices. Served over white rice, it's a real treat ready in 35 minutes.
Ingredients
- 300 g Cauliflower
- 200 g Carrots
- 200 g Broccoli
- 400 ml Coconut milk
- 1 piece Onion
- 2 cloves Garlic
- 2 tsp Curry powder
- 2 tbsp Oil
- à volonté pinch Salt
- 1 tbsp Fresh lemon juice
Instructions
Step 1
Peel and thinly slice the onion and garlic.
Step 2
Cut the cauliflower and broccoli into florets, and slice the carrots into batons.
Step 3
Heat the oil in a large pan or deep skillet over medium-high heat.
Step 4
Sauté the onion and garlic for 2-3 minutes until fragrant.
Step 5
Add the curry powder and stir for 1 minute to incorporate well.
Step 6
Add the carrots and cauliflower, mix well for 2 minutes.
Step 7
Pour in the coconut milk and add salt. Bring to a simmer.
Step 8
Add the broccoli and simmer for 15-18 minutes over medium-low heat until the vegetables are completely tender.
Step 9
Finish with fresh lemon juice and adjust seasoning. Serve hot over white rice.
