Thai-Style Vegetable Curry
A colorful and flavorful curry with potatoes and carrots, enriched with coconut milk and spices. Serve with white rice.

Ingredients
- 400 g Potato
- 300 g Carrot
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 1 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Dice the potato, carrot, and onion.
Step 2
Sauté the onion in a pan or wok with the oil, then add the curry paste.
Step 3
Add the potatoes and carrots, sauté for 2-3 minutes.
Step 4
Pour in the coconut milk and simmer for 15 minutes until the vegetables are tender. Season with salt and serve.
