Ingredients
- 400 g Carrots
- 400 g Potatoes
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 1 tbsp Olive oil
- 1 pinch Salt
Instructions
Step 1
Peel and cut the carrots, potatoes, and onion into cubes
Step 2
Heat the oil in the pan and sauté the onion for 2 minutes
Step 3
Add the curry paste and cook for 1 minute, stirring constantly
Step 4
Add the vegetables and coconut milk, simmer covered for 20 minutes
Step 5
Taste and season with salt if needed
