Quick Vegetable Curry
A quick vegetarian curry with carrots, potatoes and Asian flavors. Served over rice for a complete and satisfying meal.

Ingredients
- 400 g Potatoes
- 300 g Carrots
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 400 ml Coconut milk
- 200 ml Water
- 1 pinch Salt
- 250 g White rice
Instructions
Step 1
Cook the rice according to package directions (approximately 18 minutes).
Step 2
Peel and cut the potatoes and carrots into small dice.
Step 3
Heat the oil in a saucepan and add the curry powder, cook for 1 minute.
Step 4
Add the vegetables and sauté for 2 minutes.
Step 5
Pour in the coconut milk and water, cover and simmer for 15 minutes.
Step 6
Season to taste with salt and serve the curry over rice.
