Vegetable Curry with Jasmine Rice
A savory Asian curry with carrots, broccoli, and cauliflower served with jasmine rice. A comforting and mildly spiced dish.

Ingredients
- 200 g Jasmine rice
- 200 g Carrots
- 200 g Broccoli
- 150 g Cauliflower
- 2 tbsp Olive oil
- 400 ml Water
- 2 tbsp Red curry paste
- 200 ml Coconut milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the rice and cook according to package instructions (approximately 15-20 minutes).
Step 2
Meanwhile, cut the carrots into sticks, break the broccoli into florets, and chop the cauliflower into small pieces.
Step 3
Heat the oil in a pan and add the curry paste, cook for 1 minute.
Step 4
Add the vegetables and stir to coat with the curry paste.
Step 5
Pour in the coconut milk and water, bring to a boil, then reduce heat and simmer for 12 minutes.
Step 6
Season with salt and pepper to taste, then serve the curry over jasmine rice.
