Vegetable Curry with Rice
A mild and flavorful curry with potatoes, carrots, and zucchini, served with white rice. A culinary journey ready in 30 minutes.

Ingredients
- 400 g Potatoes
- 200 g Carrots
- 250 g Zucchini
- 400 ml Coconut milk
- 250 g White rice
- 2 tsp Curry powder
- 150 g Onion
- 2 tbsp Oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cook the rice according to package instructions (approximately 15-18 minutes).
Step 2
Meanwhile, peel and cube the potatoes, carrots, zucchini, and onion.
Step 3
Heat the oil in a wok and sauté the onion for 2 minutes.
Step 4
Add the curry powder and stir for 1 minute.
Step 5
Add the potatoes, carrots, and zucchini, and stir-fry for 3 minutes.
Step 6
Pour in the coconut milk, season with salt and pepper, and simmer for 10 minutes until vegetables are tender. Serve over rice.
