Vegetable Curry with Basmati Rice
A simple and flavorful curry with asparagus, broccoli, and spinach served with basmati rice. A comforting Asian dish ready in 35 minutes.

Ingredients
- 200 g Asparagus
- 200 g Broccoli
- 100 g Spinach
- 150 g Basmati rice
- 600 ml Water
- 20 ml Oil
- 15 g Curry powder
- 200 ml Coconut milk
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Rinse the basmati rice and cook it in 300 ml of boiling salted water for 15 minutes.
Step 2
Meanwhile, cut the asparagus into pieces and break the broccoli into small florets.
Step 3
Heat the oil in a pan and add the curry powder. Cook for 1 minute.
Step 4
Add the asparagus and broccoli. Cook for 5 minutes.
Step 5
Pour in the coconut milk and 300 ml of water. Simmer for 8 minutes.
Step 6
Add the spinach and cook for 2 minutes. Season to taste.
Step 7
Serve the curry over the rice.
