Vegetable Curry with Coconut Milk Rice
A mild and flavorful Indian curry with onions, peppers, and coconut milk. Served with white rice, it's a comforting and satisfying dish.

Ingredients
- 200 g White rice
- 400 ml Water
- 2 piece Onions
- 2 piece Bell peppers
- 400 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Bring the rice to a boil in a pot with water and a pinch of salt. Cover and simmer for 15 minutes.
Step 2
Meanwhile, peel and chop the onions and bell peppers into chunks.
Step 3
Heat the oil in a wok or large pot. Add the onions and sauté for 3 minutes.
Step 4
Add the bell peppers and curry powder. Cook for 2 minutes, stirring.
Step 5
Pour in the coconut milk and simmer for 10 minutes. Season with salt and pepper.
Step 6
Serve the curry over the cooked rice.
