Vegetable Curry and Rice
A savory and comforting Indian curry loaded with seasonal vegetables, enhanced with curry powder and coconut milk. Served on a bed of white rice.

Ingredients
- 300 g Rice
- 300 g Potatoes
- 200 g Carrots
- 150 g Mushrooms
- 200 g Tomatoes
- 3 tbsp Oil
- 200 ml Coconut milk
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Start cooking the rice according to the time indicated on the package.
Step 2
Peel and dice the potatoes, slice the carrots into rounds, and chop the mushrooms and tomatoes.
Step 3
Heat the oil in a pot, add the curry powder and mix quickly.
Step 4
Add the potatoes and carrots, and sauté for 5 minutes.
Step 5
Pour in the coconut milk, add the mushrooms and tomatoes. Season and simmer for 15 minutes.
Step 6
Serve the curry hot over a bed of white rice.
