Vegetable and Rice Curry
A simple and flavorful Asian curry with broccoli, cauliflower, and carrots. Lightly spiced and comforting, served with rice. A complete meal ready in 35 minutes.
Ingredients
- 250 g Broccoli
- 200 g Cauliflower
- 150 g Carrots
- 200 g White rice
- 3 tbsp Olive oil
- 600 ml Water
- 200 ml Coconut milk
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Bring the rice to a boil in a pot with 400 ml of water. Cover and cook for 15 minutes.
Step 2
In the meantime, cut the broccoli into florets, chop the cauliflower into small pieces, and slice the carrots into sticks.
Step 3
Heat the olive oil in a skillet and sauté the vegetables for 5 minutes, stirring occasionally.
Step 4
Add the curry powder, mix well, and cook for 1 minute to develop the flavors.
Step 5
Pour in the coconut milk and 200 ml of water. Simmer for 10 minutes until the vegetables are tender.
Step 6
Season the curry with salt and pepper. Serve over hot rice.
