Vegetable and Quinoa Curry
A flavorful Asian curry with vegetables and quinoa. Exotic, healthy, and packed with flavor, ready in 30 minutes.

Ingredients
- 150 g Quinoa
- 200 g Broccoli
- 150 g Carrots
- 150 g Cauliflower
- 200 ml Coconut milk
- 300 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the quinoa and cook it in 300ml of water for 12 minutes until the water is absorbed.
Step 2
Cut all the vegetables into small uniform cubes.
Step 3
Heat the olive oil in a pot, add the curry powder and sauté for 1 minute.
Step 4
Add the vegetables and stir-fry for 3 minutes, then pour in the coconut milk.
Step 5
Simmer for 8 minutes until the vegetables are tender.
Step 6
Season to taste and serve the curry over the hot quinoa.
