Thai-Style Chicken and Vegetable Curry
A homemade Thai curry with tender chicken and crisp vegetables in a creamy coconut sauce. Exotic and quick to prepare.

Ingredients
- 400 g Chicken
- 150 g Carrots
- 150 g Broccoli
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 2 tbsp Olive oil
- 1 piece Onion
- 2 clove Garlic
- 1 tbsp Fresh lemon juice
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Cut the chicken into cubes and vegetables into bite-sized pieces.
Step 2
Finely mince the onion and garlic.
Step 3
Heat the oil in a pan and sauté the onion and garlic for 2 minutes.
Step 4
Add the curry paste and cook for 1 minute.
Step 5
Add the chicken and brown for 5 minutes.
Step 6
Pour in the coconut milk and add the vegetables.
Step 7
Simmer for 10 minutes until the chicken is cooked through.
Step 8
Finish with lemon juice, season with salt and pepper. Serve hot.
