Chicken and Vegetable Curry
A flavorful Asian curry with tender chicken, carrots, and broccoli in a creamy, spiced sauce. Served over rice, it's a delicious classic.

Ingredients
- 350 g Chicken
- 200 g Carrots
- 200 g Broccoli
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 2 clove Garlic
- 2 cl Oil
- 200 ml Water
- 1 pinch Salt
- 1 pinch Pepper
- 200 g Basmati rice
Instructions
Step 1
Cut the chicken into cubes. Peel and cut the carrots into batons. Cut the broccoli into small florets.
Step 2
Heat the oil in a skillet and brown the chicken for 5 minutes on each side.
Step 3
Add the curry paste and minced garlic. Stir well for 1 minute.
Step 4
Pour in the coconut milk and water. Add the carrots and simmer for 12 minutes.
Step 5
Add the broccoli and cook for another 5 minutes. Season with salt and pepper.
Step 6
Serve the curry hot over cooked basmati rice.
