Creamy Curry with Vegetables and Potatoes
A mild and indulgent curry loaded with fresh vegetables and enriched with cream for extra flavor. Serve with rice.

Ingredients
- 400 g Potatoes
- 250 g Broccoli
- 200 g Carrot
- 1 piece Onion
- 2 tsp Curry powder
- 200 ml Sour cream
- 300 ml Vegetable broth
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the onion and sauté in oil in a Dutch oven for 2 minutes.
Step 2
Add the curry powder and cook for 1 minute to release the flavors.
Step 3
Add the diced potatoes, carrot sticks, and broth. Cook for 12 minutes.
Step 4
Add the broccoli florets and cook for 8 more minutes.
Step 5
Stir in the sour cream and simmer for 2 minutes. Season with salt and pepper.
