Indian-Style Vegetable and Potato Curry

Ingredients
- 500 g Potatoes
- 250 g Carrots
- 250 g Broccoli
- 1 piece Onions
- 2 tsp Curry powder
- 200 ml Coconut milk
- 300 ml Water
- 2 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Peel and dice the potatoes, slice the carrots into rounds, cut the broccoli into florets, and mince the onion.
Step 2
Heat the oil in a saucepan and sauté the onion for 2 minutes.
Step 3
Add the curry powder and cook for 1 minute, stirring constantly.
Step 4
Add the potatoes and carrots, mix well, and cook for 3 minutes.
Step 5
Pour in the water and coconut milk, season with salt, and bring to a boil.
Step 6
Add the broccoli and simmer for 12-15 minutes until all vegetables are tender.
