Asian-Style Vegetable and Potato Curry
A mild and savory curry with potatoes, broccoli and carrots. Served over white rice, it's a simple and satisfying Asian classic.

Ingredients
- 400 g Potatoes
- 250 g Carrots
- 300 g Broccoli
- 30 ml Oil
- 400 ml Coconut milk
- 25 g Red curry paste
- 250 g White rice
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions. Set aside.
Step 2
Peel and cut the potatoes and carrots into dice. Cut the broccoli into florets.
Step 3
Heat the oil in the pot. Add the curry paste and cook for 1 minute, stirring.
Step 4
Add the potatoes and carrots, sauté for 3 minutes.
Step 5
Pour in the coconut milk and water. Bring to a boil and cook for 12 minutes.
Step 6
Add the broccoli and cook for 8 more minutes. Season with salt and pepper to taste.
Step 7
Serve the curry over hot white rice.
