Creamy Vegetable and Apple Curry
A simple and comforting Indian curry with apples and vegetables, enriched with sour cream. Served over rice or with naan bread.

Ingredients
- 200 g Apples
- 250 g Tomatoes
- 150 ml Sour cream
- 1 piece Onion
- 2 clove Garlic
- 1.5 tsp Curry powder
- 2 tbsp Olive oil
- 200 g White rice
- 400 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions (approximately 15-18 minutes).
Step 2
Meanwhile, slice the onion and garlic, then sauté in olive oil in a wok.
Step 3
Add the curry powder and cook for 1 minute to release the aromas.
Step 4
Add the crushed tomatoes and diced apples. Cook for 5 minutes.
Step 5
Pour in the sour cream, mix well, season with salt and pepper. Simmer for 3-4 minutes.
Step 6
Serve the curry hot over white rice.
