Vegetable and Fish Curry
A light Indian curry with fish, carrots and tomatoes. Flavorful and aromatic, served with rice. An easy exotic dish to prepare.

Ingredients
- 400 g White fish
- 200 g Carrots
- 250 g Tomatoes
- 200 ml Coconut milk
- 300 g Cooked rice
- 2 tbsp Oil
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the carrots into sticks and the tomatoes into chunks. Cut the fish into cubes.
Step 2
Heat the oil in a pot, add the curry powder and cook for 1 minute.
Step 3
Add the carrots and tomatoes, cook for 5 minutes.
Step 4
Pour in the coconut milk, add the fish. Cook for 12 minutes over medium heat until the fish is cooked through.
Step 5
Season with salt and pepper. Serve over hot rice.
