Vegetable and Chickpea Curry

Ingredients
- 300 g Potatoes
- 200 g Carrots
- 400 g Canned chickpeas
- 200 ml Coconut milk
- 200 ml Water
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Olive oil
- 1 pinch Salt
Instructions
Step 1
Mince the onion and sauté it in oil in the pot.
Step 2
Add the curry powder and mix well.
Step 3
Cut the vegetables into cubes and add them to the pot.
Step 4
Pour in the coconut milk and water, add the drained chickpeas.
Step 5
Simmer for 15-20 minutes until the vegetables are tender.
