Vegetable and Chickpea Curry
A savory and creamy Indian curry with vegetables and chickpeas. Served with rice, it's a comforting classic.

Ingredients
- 2 medium Potatoes
- 2 medium Carrots
- 150 g Spinach
- 400 g Canned chickpeas
- 400 ml Coconut milk
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 tsp Salt
- 200 ml Water
Instructions
Step 1
Cut the potatoes and carrots into small dice.
Step 2
Heat the oil in the pot, add the curry powder and stir for 1 minute.
Step 3
Add the potatoes and carrots, sauté for 3 minutes.
Step 4
Pour in the coconut milk and water, add the well-drained chickpeas.
Step 5
Simmer for 15 minutes until the vegetables are tender.
Step 6
Add the spinach, cook for 3-4 minutes. Season with salt and serve.
