Vegetable and Chickpea Curry

Ingredients
- 350 g potatoes
- 200 g carrots
- 400 g canned chickpeas
- 400 ml coconut milk
- 2 tsp curry powder
- 1 piece onion
- 2 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Cut the potatoes, carrots, and onion into cubes.
Step 2
Sauté the onion in a pot with olive oil for 2 minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the potatoes, carrots, chickpeas, and coconut milk.
Step 5
Simmer covered for 20 minutes until the vegetables are tender.
Step 6
Season with salt and pepper to taste.
