Vegetable and Chickpea Curry
A mild and flavorful curry with potatoes, carrots, and chickpeas. Served with bread for dipping in the sauce.

Ingredients
- 400 g Potato
- 250 g Carrot
- 400 g Chickpeas
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 1 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Peel and cut the potatoes and carrots into dice. Mince the onion.
Step 2
Heat the oil in a Dutch oven and sauté the onion for 2 minutes.
Step 3
Add the curry powder and mix well, cook for 1 minute.
Step 4
Add the potatoes, carrots and chickpeas. Pour in the coconut milk and salt.
Step 5
Cover and simmer for 20-25 minutes until the vegetables are tender. Serve with bread.
